Black Bean Burritos

These black bean burritos were inspired by the burritos we are served when we go to the islands. One day, Kennedy & I ordered them for lunch. We decided to split one order. Oh my gosh!
They were so delicious, that we ordered another one to split which means we each ended up with one whole, large burrito. Yikes! We were not practicing the principle of Hara Hachi Bu, for sure.
I really don’t know what the actual ingredients were, but this is how I created the recipe for us at home.

Scrumptious filling for your burritos
2 cups cooked brown rice
1 can black beans, drained and rinsed
1 (4.5-ounce) can green chilies
1 (10-ounce) package frozen corn
1 garlic clove, minced
3 green onions, sliced
1 green pepper, diced
1/2 teaspoon chili powder
1/2 teaspoon oregano
Juice of one fresh lime
1/4 cup fresh cilantro, finely chopped
Sea salt and pepper, to taste
Shredded lettuce and tomato
Mild or hot sauce
Spelt or flour tortillas
Mix all ingredients together.
Liberally spoon rice mixture onto center of tortilla. Roll up jelly roll fashion. Slice in half on the diagonal and place on bed of shredded lettuce and tomatoes.
Drizzle tops of tortillas with Mild or hot sauce or your own homemade salsa (recipe below) or your own homemade Burrito sauce (recipe below).
These are wonderfully delicious, and so is the salsa and the sauce.
Makes 8 - 10 black bean burritos

Homemade Tomato Salsa
This is another one of our favorite dishes. It’s a chunky tomato salsa. I love Mexican food, but for some reason, some of it is too smooth, some too hot and some just not right.
I think the texture of the food has a lot to do with the taste. And it’s true with this tomato salsa. Chunky tomato salsas just seem to have more character, and this one seems to do the trick.
1 large can diced tomatoes, drained very well.
1 can Rotel brand “original” tomatoes (found in the Ethnic section of your supermarket)
2 jalapeno peppers, diced
2 - 3 garlic cloves, minced
1 teaspoon cumin
1/4 - 1/2 cup cilantro, finely minced
Mix all ingredients together.
After you place your black bean burritos on the bed of shredded lettuce and tomatoes, spoon over your homemade tomato salsa.
Burrito Sauce
I have quadrupled this sauce for a crowd
To a sauce pan, add:
2 tablespoons oil
2 tablespoons flour
3 tablespoons chili powder
Stir until smooth and slightly thickened
Add:
1 teaspoon cumin
2 cups vegetable broth
1 (15-ounce) can tomato sauce
1/4 teaspoon garlic powder
Stir all ingredients until well mixed.
Simmer for 20 - 30 minutes and spoon over burritos.
These black bean burritos are great for a family meal at home or worthy enough for guests. Add a lettuce salad and you have a complete meal.
